Ingredients
  

  • Beef Sirloin Tip Roast: 3-4 lbs
  • Coarse Salt: 1 ½ tablespoons
  • Freshly Ground Black Pepper: 1 teaspoon
  • Garlic Powder: 1 teaspoon
  • Onion Powder: 1 teaspoon
  • Smoked Paprika: 1 tablespoon
  • Fresh Rosemary: 2 sprigs
  • Fresh Thyme: 2 sprigs
  • Olive Oil: 2 tablespoons
  • Optional Marinade: 2 tablespoons apple cider vinegar or juice of 1 lemon

Instructions
 

Preheat Smoker:

  • Set your smoker to 225°F–250°F.

Prepare the Roast:

  • Pat the 3-4 lb beef sirloin tip roast dry with paper towels.
  • Rub with 2 tablespoons of olive oil.

Season:

  • Apply 1 ½ tablespoons of coarse salt and 1 teaspoon of freshly ground black pepper.
  • Sprinkle 1 teaspoon each of garlic and onion powder, and 1 tablespoon of smoked paprika.
  • Press 2 sprigs each of fresh rosemary and thyme onto the meat.

Optional Marinade:

  • Drizzle with 2 tablespoons of apple cider vinegar or the juice of 1 lemon.

Smoke:

  • Place the roast in the smoker.
  • Smoke for 3–4 hours until the internal temperature reaches 135°F for medium-rare or 145°F for medium.

Rest & Slice:

  • Remove the roast and let it rest for 10–15 minutes.
  • Carve against the grain and serve.
