  • 2 cups old-fashioned rolled oats
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon optional

Wet Ingredients:

  • 1 cup unsalted butter softened to room temperature
  • 1 cup packed brown sugar
  • cup granulated sugar
  • 1 large egg at room temperature
  • 1 teaspoon vanilla extract

Mix-Ins:

  • 1 cup semisweet chocolate chips
  • 1 cup raisins
  • ½ cup chopped walnuts optional

Instructions
 

Preheat the Oven:

  • Preheat your oven to 350°F and line your baking sheets with parchment paper.

Cream Butter and Sugars:

  • In a stand mixer fitted with a paddle, cream 1 cup unsalted butter, 1 cup packed brown sugar, and ⅓ cup granulated sugar for about 1 minute until light and fluffy.

Mix in Egg and Vanilla:

  • Add 1 large egg and 1 teaspoon vanilla extract; beat on low speed until well combined.

Combine Dry Ingredients:

  • In a medium bowl, whisk together 1 ¾ cups all-purpose flour, 2 cups old-fashioned rolled oats, ½ teaspoon baking soda, ½ teaspoon salt, and (optional) ½ teaspoon ground cinnamon.

Add Dry to Wet:

  • Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.

Fold in Mix-Ins:

  • Gently fold in 1 cup semisweet chocolate chips, 1 cup raisins, and (optional) ½ cup chopped walnuts until evenly distributed.

Scoop the Dough:

  • Using a cookie scoop or tablespoon, drop approximately 2 tablespoons of dough per cookie onto the baking sheets, spacing them 2 inches apart.

Chill (Optional):

  • For thicker, chewier cookies, chill the dough on the baking sheet for 5 minutes before baking.

Bake:
