  • Lean Ground Beef: 1 pound
  • Potatoes: 2–3 medium diced
  • Onion: 1 small chopped
  • Carrots: 2 medium sliced
  • Celery: 2 ribs chopped
  • Garlic: 2 cloves minced
  • Broth: 4 cups beef or chicken, preferably low-sodium
  • Milk or Cream: 1 cup low-fat or plant-based
  • Flour: 2 tablespoons
  • Salt and Pepper: To taste
  • Optional Herbs: Parsley thyme, or basil (a handful, chopped)

Instructions
 

Brown the Beef:

  • Heat a large pot over medium heat. Add 1 pound of lean ground beef and break it into small pieces until lightly browned. Drain excess grease if necessary.

Sauté Aromatics:

  • Push the beef aside and add 1 small chopped onion and 2 minced garlic cloves to the pot. Sauté until the onion turns translucent.

Add Vegetables:

  • Stir in 2 sliced carrots and 2 chopped celery ribs. Cook for 2–3 minutes to soften the vegetables slightly.

Incorporate Flour:

  • Sprinkle 2 tablespoons of flour over the mixture and stir until the ingredients are evenly coated, helping to thicken the soup later.

Add Potatoes and Broth:

  • Mix in 2–3 diced medium potatoes and pour in 4 cups of beef or chicken broth. Increase heat to bring the mixture to a gentle boil.

Simmer:

  • Reduce heat, partially cover the pot, and simmer for 15–20 minutes until the potatoes are tender.

Finish with Dairy:

  • Slowly stir in 1 cup of milk or cream. Let the soup warm through for about 5 minutes without boiling.

Season to Taste:

  • Adjust with salt, pepper, and optional fresh herbs (parsley, thyme, or basil) for enhanced flavor.
